CHEESY COURGETTE'S.     INGREDIENTS:- 1KG (2Ib) Courgette's, 3 Egg's, 275ml (1/2 Pint) Single Cream, 125ml (4oz) Grated Cheese, Salt and Black Pepper, A Pinch of Nutmeg.     OVEN SETTING: 200.C/ 400.F/ GAS MARK 6 :- Grease a shallow ovenproof baking dish.    Wash and slice the Courgettes. Cook in boiling water for 3-4 Minutes' then drain. Beat the egg's and cream together in a bowl. Add the salt, pepper and nutmeg. Spread the courgette's  into the baking dish. Pour the egg mixture over them and sprinkle the grated cheese on top. Bake the courgette's for about 20 minutes/ until the egg mixture has set and the cheese is golden and bubbly. happy eating.

Pear Flan -: Ingredients,  5 pears, 125g (4oz) Butter, 125g (4oz) Flour, 125g (4oz) Caster Sugar, 3 Eggs Apinch of salt , Afew drops of Vanilla essence And thats all. Oven setting: 180c /350f/ Gas mark 4 , Grease an ovenproof flan tin.  Melt butter in sauepan over low heat. Beat the eggs and sugar together. stir in the butter, then the flour , a little at a time .Add the vanilla and salt. peel the pears and cot them into quarters. take out the cores and pips. Pour a little mixture into the dish. Put in the peears, then the rest of the mixture. Bake the flan for 45 minutes to an hour until it is puffy and golden brown.  Yum Yum.

Sausage Rolls:  Ingredients, Pastry made from , 125g (4oz) plain flour and 60g (2oz)mof margarine , 3 tablespoons of  water, pinch of salt. Oven: setting 220c/ 435f / Gas mark 7 , Grease a baking sheet.Cut the margarine up into small bits.Put it in a bowl with the flour and a pinch of salt .Rub them together until they look like breadcrumbs. sprinkle the water into the bowl. Mix the dough until it forms a soft ball that leaves the bowl clean. Roll out the pastry thhinly into a oblong about 10cm (4 inches ) wide. Cut into two equal strips. Then cut meat in half and roll it into two sausages as long as the strips of pastry . Lay them down the centre of the pastry strips. Brush the sides of the strips with egg. Fold one side of each strip over the sausage meat and press the pastry edges firmly together. Cut the rolls into small pieces. Brush them with beaten egg and cut two slits in the top of each one . Put them on a baking sheet. Bake them for 20-25 minutes until golden brown. have fun.

Stuffed Eggs:  Ingredients, As many eggs as you like, Mayonnaise, salt and Pepper, finely chopped Parsley. Put the eggs in a saucepan of cold water. bring to the boil, then let it simmer for 10 minutes. Take of the pan from the heat ,and put it under a cold tap .This stops a black ring from forming round the yolks. let the eggs go cold. Tap the eggs on a hard surface to crack the shells . peel off the shells . Do not have to fresh eggs or the shells will not cume off well.Cut the eggs in half lengthways. Scoop out the yolks into a bowl. Mash them up , stir in enough mayonnaise to make a stiff paste. Add salt and pepper. spoon the yolk mixture back into the  whites of the eggs and sprinkle a little chopped parsley on the top. Little one's Surprise them this christmas.

OLD  ENGLISH  TRIFLE, Serves 6-8 ,  Ingredients, 6 Trifle sponges, 3 tbsp raspberry jam, 150ml /1/4 pint sweet sherry,125g / 4oz seedless white grapes, 125g / 4oz, black grapes, halved and deseeded, 2 peaches, peeled, stoned and chopped ,2 bananas, 2 tbsp lemon juice, 45g /1. 1/2 oz cornflour , 600ml / 1 pint of milk, 1 tsp vanilla flavouring, 3 egg yolks, 45g / 1. 1/2 oz sugar, 300ml / 1/2 pint double (thick ) cream, To decorate::::  Glace cherries, Angelica, Toasted flaked almonds.   1. Split the trifle sponges in 2 and spread with the jam. Arrange in the base of an attractive 2 Litre / 3. 1/2 pint serving dish. 2. sprinkle the sherry over the trifle sponges and spoon in the grapes and peaches.slice the banana and mix with the lenon juice. Addto the trifle. 3. Blend the cornflour in a large jug with 4 tbsp of the milk. Heat the remanining milkwith the vanilla flavouring until warm, and then pour on to the blended cornflour, whisking well. Beat the egg yolks and whisk them into the mixture . Remove from the heat and add the sugar. Pour over the fruit and leave to cool completely. 4. Whip the cream until it holds its shape, and then spoon about one- third of it into a piping bag fitted with a star tube. Spread the remaining cream over the custard. Pipe a border of cream around the outside and decorate with glace cherries, angelica and toasted almonds. 5. chill until ready to serve. yum, yum yum.
